Grundlagen der sensorischen Analyse von Lebensmitteln (analytischer und hedonischer Ansatz); Sensorik in der Produktentwicklung und im Qualitätsmanagement; Durchführung von Standardtests in der Sensorik (DIN/ ISO-Normen); Das Verfahren der Kupferchloridkristallisation wird vorgestellt, die visuelle Auswertung der Methode geschult und Qualitätsverluste unterschiedlicher Verarbeitungsverfahren dargestellt.

Ernährungsverhalten: Grundlagen der Ernährung des Menschen unter naturwissenschaftlicher und soziologischer/ kultureller Betrachtung. Ernährungsstile und -systeme werden vorgestellt ebenso wie Methoden zur Erfassung des Ernährungsverhaltens, Nachhaltigkeitsaspekten und der Erfassung der Lebensmittelgruppen/Nährstoffe (z.B. Pyramide). Die Veranstaltung verdeutlicht, dass Ernährung als Forschungsgegenstand inter-/transdisziplinär behandelt werden muss.


By the end of this elective course students will be able to describe the interactions of diets, sustainability and human nutrition/health. Also, they will be able to assess the impacts of a dish/meal (as unit) on sustainability and nutrition parameters.

The course will cover the following topics:

  • Culture and cultural patterns of diets
  • Interactions of food quality and lifestyle on sustainability and human health
  • Healthy diets within sustainable food systems
  • Model diets such as Med. Diet and New Nordic Diet
  • Creation/optimization of a dish based on the Planetary Health Diet criteria
  • Role of organic food systems
