In the lectures, we will introduce frameworks and models for food systems and dietary approaches according to the transformation towards enhanced sustainability including health. Model diets such as the MedDiet and New Nordic Diet and several traditional diets in other geographical regions around the world will be discussed. Furthermore, the role of dietary guidelines and the implementation of sustainability are also part of this course. We will bring together all kinds of aspects around the course topic, from sustainability assessments, labeling, health to traditional knowledge.
